The perfect recipe for Pancake Day

Celebrate Pancake Day with this easy-to-make recipe

Bananas, chocolate and almonds give an exciting twist to a standard pancake

SERVES 4, TAKES 30 MIN

You will need -

PANCAKES
2 Medium eggs, seperated
60g (2 1/2 oz) plain flower
1/2 tsp baking powder
80ml (3fl oz) milk
Pinch of salt
15g (1/2oz) butter

FILLING
70g (2 1/2 oz) plain chocolate
knob of butter, softened
3 bananas
Juice of 1/2 lemon
2tbsp toasted flaked almonds

1) First, melt the chocolate over a pan of gently simmering water. Stir in knob of butter and set aside.

2) Meanwhile, for the batter, place egg yolks in a bowl and add the flour, baking powder and milk, stirring until smooth.

3) Place egg whites in a large clean glass or metal bowl. Add a pinch of salt and whisk until the mixture resembles shaving foam. Fold the batter, ready to use immediately.

4) Melt the butter in a large non-stick frying pan over a medium heat. Add some pancake batter to whatever size you like - you can fry three small pancakes at a time (makes 12). Fry for 2 min until pancakes look firm on the base and bubbles appear on the top. Flip over, using a spatula. Cook for 2 min, until golden and cooked through.

5) Chop bananas then toss them in lemon juice. Divide the pancakes and bananas between four plates. Scatter with almonds and serve with plenty of chocolate sauce.
