Sausage burgers with sunblush tomatoes and parmesan

These sausage-meat patties make a great change from burgers. For a vegetarian option, use mashed veggie sausages

TAKES 30 min to make
Per serving 242 kCal 18G Fat

8 premium pork sausages
½ fennel bulb, finely chopped
10 SunBlush tomatoes in olive oil, drained and chopped
40g (1½oz) Parmesan cheese, grated
Salt and freshly ground black pepper

1 Take the sausage meat out of the casings and place in a bowl. Add the fennel, tomatoes and Parmesan and season with a little salt and plenty of pepper.

2 With wet hands, make 6 even-sized balls out of the mixture and then flatten each one to form a patty. Transfer to a baking sheet lined with greaseproof paper, then cover and chill until ready to cook.

3 Barbecue for 10 min, turning halfway through. Serve in bread rolls with sliced red onion, lettuce and a choice of sauces.
