You will need:
2 large eggs, lightly beaten
Salt and freshly ground black pepper
1tbsp milk
1/2tbsp grainy mustard
8 slices white bread
8 slices honey roast ham
150g (51/2oz) gruyère cheese, grated
2 tbsp olive oil
Method:
1 Place the eggs in a shallow bowl, season with salt and pepper, then stir in the milk and mustard.
2 Dip both sides of two slices of bread into the egg mixture. Let any excess egg drip off. Top one slice with two slices of ham and a quarter of the cheese. Sit the second bread slice on top, pressing down firmly. Repeat with the remaining ingredients, to make 4 sandwiches.
3 Heat the oil in a large frying pan over a medium heat and cook the toasties for 1 to 2 min on each side, until golden and crisp. Serve immediately.
